A modern trend in wedding cake design - this 3 tier wedding cake is decorated with edible and lace, and proves that not every wedding cake has to be white!

When Marie and Matt came over for a wedding consultation, they weren’t too sure about which cake design they'd like. Loosely, they had hoped for a country theme to fit in with the exceptional wedding location at Thorseby Hall. We talked through some ideas and came up with edible hessian and lace (a big trend for this year), an idea Marie and Matt loved, so we went from there.

This really is a massive cake, the pictures don't do it justice. The bottom tier is huge 12 inch round, 6 inch tall chocolate cake. We airbrushed it gold and placed a wide band of edible hessian around the base, bringing it into a bow at the front. It sits on an ivory base with ivory and lilac ribbon.

One of the ideas we needed to fit in with the country theme was a Swiss wheelbarrow filled with wildflowers. We made this entirely out of sugarpaste, and filled it with our fantasy wildflowers and daisies; it was entirely edible. In the corner of it is a quaint, little plaque with a hessian string, where we’ve written Marie & Matt with a love heart.

The middle tier is zesty lemon, which is made with fresh lemon zest, lemon juice and extract. The centre is filled with Sicilian lemon curd. This tier was lilac coloured, with lilac blossom fantasy flowers around, and handpainted gold art.

Finally, the top tier was ivory, with edible lace detail and sporadic flowers for decoration. As innovators in cake design, we've finished the wedding cake with a unique, beautiful bow made from edible hessian and lace. This may be eaten, or kept.

We had a piece of tree trunk especially cut for Marie and Matt to use as a cake stand - and we think that the tower of cake looked stunning at their venue.
