This deceptively big 3 tier wedding cake is one of the most elegant we've made. The inspiration came from the pattern on the Bride's vale, and we matched that pattern throughout the cake with some exquisite royal icing detail.
The top tier was an 8 inch rich fruit cake, fed over time with brandy. We covered the cake in marzipan and Swiss Massa Ticino Tropic sugar paste. The Bride and Groom had a bespoke cake topper made with their name and wedding date, which sat gracefully on top of the wedding cake. On the side of the cake was the finely piped royal icing flower detail.
The middle tier was a 10 inch lemon cake made with real lemon zest and juice, which we covered in Belgian white chocolate ganache and sugar paste. It featured a hand tied royal blue bow.
The cake was made complete with a final 12 inch tier vanilla cake, filled with real buttercream and jam, covered again in ganache and sugar paste. The piped flowers and leaves ensured that the design coordinated with the top tier, adding a classic symmetry.
Between the tears is a hand piped pattern to finish.
